Fiesta Foods - Mexican Pozole
Original Recipe Yields 6 servings

Ingredients
• 8 dried chile California soaked in boiling water for 30 minutes, and drained
• 4 tsp chicken bouillon
• 1 whole onion
• 1 whole garlic and 4 pieces
• 2 pounds pork tenderloin, cubed
• 1 (15 ounce) can white hominy or yellow hominy, drained
• 2 tsp dried Mexican oregano

• TOPPINGS
• 2 cups of chopped onion
• 1 cup of chopped cilantro
• 1 cup of chopped radishes
• Lime
• crush pepper
• Oregano.

Directions:
Remove the stems from the re-hydrated chile peppers. Combine with 2 cups of water, 4 tsp of chicken bouillon, 4 pieces of garlic and 1 tsp of oregano in a blender or food processor, and puree until smooth. Pour into a 5 or 6 quart slow cooker.
Pour through the strainer the mix we just blended and add pork, whole onion, whole garlic, and white or yellow hominy. Season with the 1 tsp oregano. Cover, and cook on High for 4 to 5 hours or on Low for 6 to 7 hours. Remove the bay leaf before serving.
